Biryani is something that us Delhites have taken to heart. All of us have our own favorite places that serve biryani. And with more than a handful of new joints opening up everywhere, it's hard to pick your one true savior. Whenever you're craving for that handi full of rice, loaded with fried onions and doused with chunks of chicken on the bone, you end up getting it from your nearest "Moradabadi Biryani" store that has a neon sign and just a pateela full of regular old rice and some chicken. They measure it out and serve it to you in disposable plates.

Why settle for anything less than a methodically prepared, systematically generated, meticulously synthesized handi of Biryani? The Biryani Project in Greater Kailash is a result of years of trying and testing and tasting! The people behind this venture have been all across India, trying out various Biryanis the country has to offer. And no no no, they don't just give you the odd menu of some Biryani and some Mughlai dishes and tikkas and what not. THEY DEAL WITH JUST BIRYANI

The Biryani Project has a very limited and exclusive menu. They have Chicken, Mutton and Vegetable variants of the good old Lucknowi and Hyderabadi Biryanis. But they also have a Godaveri Biryani, which is a first for any place serving biryani that I've heard of. Another variaty is the Bohra Biryani from Mumbai which you won't find anywhere else either.


Coming to the food itself, I ordered myself a Chicken Hyderabadi Biryani. It came on time and was served along with a raita. The Biryani Project doesn't serve their biryanis with a Mirchi Ka Saalan, because they know their stuff pretty well! After dining in Hyderabad itself, they saw that the Saalan was something that you have at every table as an add-on. Like pickle or chutney in North India, Saalan is merely a condiment, hence they choose to send over the Tadka Raita. This Raita was truly the stuff of heavens. With a whole red chilli and other roasted spices, this raita packed a punch.

The biryani is served in a clay handi and is sealed with the dum. After cracking open the pot, a massive whiff of flavors and spices hit you. You see the beautifully cooked rice grains topped with fried onions and saffron. THEY EVEN PUT SAFFRON IN, CAN YA BELIEVE IT?!

The rice grains were nothing like "grains". They were long and smooth and distinct. Forget just biryanis, the rice was the best rice I've had EVER. So light, so flavorsome, so long, so fluffy, it was everything a man looks for in a wife. The chicken chunks at the bottom were cooked to perfection and the combination of the spicy biryani along with the raita was enough to send me to biryani heaven.

I've truly found my happy place when it comes to biryanis. I hope you do too!
